you can cut back on the yeast
It will grow to its own suitable level
I'd suggest maybe 250g


Weetbix and allbran can also be cut back by up to 1/3 with no great impact

I would keep Cirric acid down too if you have some way of checking Ph get it to about 4.5 to 4.8

I would be interested in your cachaca recipie. I have made a batch, just made the recipie up, loads of raw sugar, treacle, brown sugar, whatever was available. I have a bunch of Brazillian friends and they thought that it was very good. Would be interested in any recipies for cachaca. Btw the capahrina is a very popular drink in Brazil, although made on vodka as much as cachaca. It is spirit, lime, sugar and ice.

equipment: Mostly make beer and occasionally spirits. I only have an air still; a reflux column is making it's way to the top of the ToDo list. Otherwise I have a couple for temp controlled fridges and the ususal ancilliary equipment.

Just ran 70 litres weetbix all bran I must say I am a convert
I used ec1118 yeast it took about 6 weeks to ferment

equipment: 100 litre boiler with a 4 in 5 plate bubbler on top with a 500 packed section standing by if needed

I've stripped my first one and it does mell ane taste very nice....very similar to a beer I stripped but not so Hopsy.

I'm hereing you aussie...not to sure whether to Reflux the fuck out of it for a nice vodka or put half through tje pot again and make cuts and stick it on some Oak.

I did mine with Lowans...Aussie , have you done this before wih bread yeast or is it first time with EC 1118

Now use 50l Keg with Pot head for Rum and Neutral stripping runs on gas .
LM/VM head with 1m packed 2" on Still Spirits boiler for Neutrals.

I've currently got gen 3 of this fermenting... Using backset and reusing the grain bed. Going to strip 5 gens, do a spirit run and bang the lot on American oak. See what I come up with.

I'll start a thread when I get results.

Just imagine how bloody good it would be with no ALL BRAN AND SOME NICE CARA OR CRYSTAL MALT GRAINS...now there's a killa drop, on thin, medium toasted American Oak... The denser stuff from the deep South ..Missouri type timbers.

bt1, new to all this whisky stuff....how much caramalt or chrystal malt do you suggest ...can you elaborate on why it would be better to replace the bran woth it ...cheers

I've always found it a fast finisher. As long as you keep the temp up to it, I find that 25 litres will ferment out in about 4 days.
Maybe it gets slower as the volume increases?

Weetbix is made in Canada under the brandname weetabix, and is exported to the USA if you live near a Trader Joes they usually stock Weetabix for about $3 a 750 gram pack.
