non sugar based liqueur

Postby B-Man » Thu Apr 01, 2021 9:36 pm

Has anyone got any ways to make a liqueur without making a sugar syrup?
I cringe when I see the amount of sugar going into it. and also limits diabetic friends.
Is there anything else that gives that sweet taste and thickens it up without that massive amount of sugar?

From beer forums, reading bout back sweetning ginger and root beers stevia seems to be closest thing to sugar taste wise and glycerine will help with mouthfeel. But I have not got first hand experience. Google back sweetning it may give you some ideas..

I think Bman is talking about adding sugar to spirit when making up fancy panty droppers.
I had to read it twice myself.

Bman, I am on a low carb diet at the moment and use “monk fruit with erythritol” sweetener in my almond flour biscotti.
It’s not cheap but the flavour is ok.
I use part of a hermesetas tablets in my coffee, most other types taste like urinal lollies to my tastebuds(don’t ask, I wont tell).
The diabetes thing is stuffed by alcohol anyway, your liver turns the alcohol back to sugar.(not quite correct but near enough).
Personally I don’t like a lot of sugar in those liquors but things like limoncello need something to temper the bitterness.
A lot of the Keto recipes have different sugar replacements in their ingredients.
