I made something similar not Quite as spicy as yours Quite a bit milder. Instead of using limes I used Kaffir lime leaves about 8 leaves per bottle let it sit for a couple of weeks and bingo nice flavour missus loves it too and you get that lovely kaffir lime smell as well to excite the senses try some in your brew

Cheers kensbrews..have a kaffer lime bush out there in the yard so after having tried that drink elsewhere and also being quite amicable to a tastie thia curry or two I think its time to burn the ring ....as it were...and make some tasty stuff.

Has anyone tried this without the chilli?

It sounds like it could be interesting as a lime incarnation too.. Possibly some black pepper added...

Now i've just made an alcoholic version of those red rock deli chips! haha

I'm not super into chilli, but i did make some chilli beers out of a cervesa by adding one birdseye per bottle while bottling (they were pinpricked about 5-10 times each too). They seemed to just get hotter and hotter with age.

My chilli loving mates went nuts over 'em!

I forgot all about this thread which I read ages ago and with my manzano chilli tree in it's 3rd year producing some nice chilli's I just gotta fire up those 6 month old low wines and do one last pot still/ aint got no limes but plenty of other herbie goodies and fruit here so should make an interesting drink and hopefully SWMBO won't like it as it will be so hot to drink..... :music-deathmetal:

By the way the manzano chilli is supposed to be so hot it 'will kill a gringo'..... :)) :)) :))

I have a bunch of Rocoto chillies so I will have to give this recipe a go. They're slightly lower on the Scoville scale, but still pretty toasty and have a great taste.

Does the spirit have to be 50% ABV, or should 40% be ok?
