After making a few batches of
Espresso Infused Vodka I thought I'd give this recipe a try.
My slightly modified version was:
Ingredients:
3 cups water
1 cup raw sugar
1 cup coffee (made from 2 coffees from coffee pod machine)
2 tsp vanilla extract
4 cups 46% neutral hearts (2 cups 93% neutral added to 2 cups water)
Method:
Warm 3 cups water on stove. Add sugar and dissolve.
Add coffee, low simmer for an hour - until mixture is down to about 1 litre
Allow to cool to room temperature, then add vanilla extract
Add neutral to water to dilute, then stir in slowly to coffee mixture.
Bottle and enjoy!
Makes 2 litres.
I found that using raw sugar and adding coffee from the start over a very low simmer prevents the coffee from burning and also adds a caramel flavour to the mixture.
The only problem now is that this so nice, we drink this stuff too quickly!
