I've been aging this on charred oak for 4 months now, this lot was done with my old trusty pot still.....

Opened the keg up and poured out a few liters just now, this is some of the best gear I've done yet.

I'm a rum drinker and the mrs loves her bourbon, she wouldnt shut up about how good this is so I had to pour me a glass, well....... now I'm on my 5th :mrgreen:

This really is up there with the best I've ever done.

Good stuff, I am on my 4 gen now (I think, I have a memory like a goldfish) I'll be doing a spirit run within a week. Last wash has been sitting for nearly two weeks now so will be ready to run whenI get home :) looking forward to it.

I am running it now, put all the stuff I have stripped in and topped up with 4 gen wash that finished awhile ago, running it through my 1500mm condensor controled still, all packing except 5 scrubbers removed. Checked the ABV 85%, kind of pissed off I wanted say 70 - 75%, so I have pulled condensor right out as far as it'll go, now getting 82%. Not happy - f***king reflux still, I have been waiting for this for ages, anyway smells very, very smooth, nice subtle smell.

So far 8.1 litres and still going.

Kind of annoyed with myself, the still is designed to do what it's doing and that is pull high ABV.

I'll air it and see how much taste it's retained, hopefully it didn't strip to much out.

I think it will be fine mate, my bubbler takes it at about 90% and retains a lot of flavor.

Hi Spud,
Another stupid question from Kimbo, if it turns out that you have taken too much flavour out, can you put your spirit back in the boiler and run it again at a lower ABV?
or doesn't it work that way?

I suppose I could shut it down, tip it back in and go again.......... I'll see what it turns out like. Getting into the tails now, I'll air it and see how it goes, first time I have tried this.

P.S love the boobs, STAY WITH THE BOOBS :)

never tired this but some washes seem to go real funky smelling the next day after you boil them. not sure how it would go re-boiling?

i would tip it back into the still with the next generation wash so you get max flavour again

Agreed!

just running again will strip more flavor ;)

Build a pot still spud, or take "all" the packing out and run with as little reflux as possible.

It's getting a real smell to it now, smells like whiskey - like real whiskey. Really getting some colour to it to, gave some of the oak a heavy char to add more colour.

I need to make some more or none of it'll make it past the 6 month stage.

Looking good dude, better pour yourself a glass so you know it's ready, wouldnt want it getting over oaked :lol:

I am thinking if it does over oak I'll blend it with the next lot :) I want to let it sit for as long as I can, I really want to have a stash that is 12 months old or two years, something to give to the father in law and go "try that" :)

Now it's got good color I'd be inclined to remove some of the sticks (it looks like you have a lot in there) if you intend leaving it that long, I reckon you should sample it just so you know how it's going........ too much oak can make it bloody horrible, I learned that with my rum :cry:

Yeah ok, I'll give it a go and see what it's like, I'll add to it with the next batch to, I need a few bigger demijohns.

I'm looking for some cheap kegs just for aging stuff in, might have to take a drive up to Buxton in the near future.
