Internals of air still - temp sensor

Does anyone know what type of temperature sensors air stills have?
From tear down videos it looks like the older models with one or two buttons have thermal cutout type switches that stop the unit when it becomes hotter than boiling.

But new models have temp controllers.
I'm wondering if it's a K type thermocouple, NTC resistor, etc?
Also generally curious how easy and what modifications could be made?
