When I started I did something similar to what it sounds like you want to do. Converted a 50l keg into a boiler with 2 * 2200m elements and built myself a modular still ( almost exactly the same Jessie from Chasing the Craft in NZ did when he started). With my modular set up I can make whiskey/rum/etc when set up in pot still mode and can also make good neutral when it is in reflux setup. If you're reasonably handy and can braise copper to stainless steel it isn't too hard to put something together.
Don't make the same mistake I made though. I thought it would be much cheaper to build rather than buy, but by the time I made a few mistakes & had to start things again I could have bought an ok starting setup for less!!!! :laughing-rolling:
