Fermentis US-05

Hi All,

Wondering if anyone has experience using US-05 for AG.
I have used it four times with a OG between 1.060 - 1.050 and cant get below 1.015fg. I know it is advertised as med to low attenuation but was hoping to get down to 1.010.
Any recommendations on an alternative yeast for a malt whiskey?

what about your mash?
what was the grain bill?
what temperature di you mash at? how accurate is your thermometer?
how long did you mash for?

I got the idea of using US-05 and bakers yeast together from this forum and have used it with great success.

The flavour is defiantly different when using the combination of the two but in a good way. Not only that the FG is lower as well, getting down to around the 1.005. I keep a stable temp of around 22C when fermenting to avoid off flavours from the US-05. It does mean the bakers yeast is a little slower to complete fermentation but the wait is worth it.

I'm interested in this concept as from what i have read when combining yeasts that one will come out on top and consume the other, this would imply that we get better results out of "cannibal" yeasts. I suppose while they are duking it out they are still going to eat some sugar, but in the end one will eat the other or perhaps merge into a random strain?

Any good links for the concept??

As my ferment appears to have finished at 1.015 using us05. If i were to add some bakers yeast and crank the ferment temp up beyond the 25c to get the bakers yeast fired up would that still cause the us05 to cause off flavors? Considering the us05 seems to have fermented out.

Its worth a shot I suppose, how big is your wash and are you willing too risk ruining it if it doesn't work?

Thanks Plumby. Good point. 120l of wash. 32kg of grain manually squeezed out of mesh bags. A lot of work has gone into it. Emmm.......

Hi mate,
I use US-05 A LOT in my home brewing. If you can get down to 1014 then you're doing well. It likes to sit around 22-26C (Fermentis suggest 18-28C).
