I wouldn't bother drinking it as is, keep it airtight until you get ya still head. Or ya want to shut down the infection maybe make a syrup up of a couple of cups of sugar, stir it up and re-seal with an airlock. The bit of extra fermentation with give you a new cO2 layer and kill off ya infection a bit.

G'day fellas, I am wondering if you guys are stripping this wash and then running on 4 plates or just running once on 4 plates. I have a FSD Neutralizer rig with a 50 litre milk can boiler. I was planning on stripping in pot mode, then a slow (toothpick stream) spirit run with 4 plates? Any advice.

I wouldnt strip first is why I built a bubbler so I didnt have to. Only thing I strip first is neutral.

Did mine on a single run through 4-plates.

Just the usual bring up to full reflux for 15 or so minutes before pulling fores, then a steady stream for the rest of the run.

Notin your area so noi don’t know of any. Why not pop into the welcome centre and introduce yourself and let us know what you are trying to produce. Lots of experienced guys here who might be able to help. Lots of inexperienced guys here who would love to pick someone who has done it before brain

Had fruit bats move in this year and clean up all the plums, they are not normally this far south. They are still here cleaning up my figs :doh:

I'm about to do my second plum mash. They are currently frozen.
What do you guys do oak wise?
My first one tasted not to bad white dog. But I've been less happy with it after oaking it for a year. Tasted it roughly monthly after 6 months.
Seems to have lost that hint of plum flavour.

something i dont understand - if you intend to go for stilling then you have to avoid fermentin fuits with high pectin like plums - otherise you encourage methanol in your pot still

If you want the flavour you don’t have a choice so people tend to take bigger fores cuts.

Sorry for the super late reply, only just spotted this.
No the amount of methanol you will produce is negligible, if you leave seeds in use pectinase have excess leaves and sticks in ect you may increase its production but it will still be negligible. Generally fruit will give you a bit higher fores and heads cut but that is no big deal :handgestures-thumbupleft:
