I copied our redneck cousin's and made this. Good clean neutral and fresh cherry's. We have a bumper crop in Mudgee. Apparently it will be ready in two years. We'll see.

Two years dam that's a well aged g dropper...

Seems to me that if you played around in there with a potato masher and smooshed a few of those cherries up a bit i recokn it would not take 2 years.

Mate i gotta tell ya, some of the best seasonal mead i ever tasted was cherry. Man, with a touch of vanilla and a whisper of cinnamon, it is pure heaven. Can't imagine it would be different in a 'shine done right. Make yer base and add it as an adjunct. A month, tops. I mean f*kin mellow.

I am yet to try fresh cherries. This could be very interesting!

Sorry mate don’t know what type of cherry but they were big ones. Some of them barely fit in the flagon. I did a 1gallon flagon with pips in and a couple of smaller jars with no pips. ABV is still strength, 85-90%.

Old mate reckons leave the stalks on so you can eat the Cherry’s easier. I didn’t do that.
