Stig, did you end up with a recipe? I have 10+ kg of pulp in the freezer and not sure what to do with it. :think:

Whats the gravity of the passionfruit do you have a refractometer. For a passion fruit brandy I would try add as little sugar as possible and just enough water so as not to stress the yeast from to high sugar content.

So going by brewers friend passionfruit has very little sugar. You would be better with a neutral like wbab and as much passionfruit as you can fit in. wbab because it would be better flavour then tpw over pot still or plates. May still taste like crap never done it. Or may be a ripper.

50l keg boiler 4" still mount 4" sight glass 1" drain..
4 plate 4" bubbler, 600mm packed section
