Yup Beaver's recipe was the one I followed and I messaged him to ask how he went separating it racking and guess what, he had the same issues & agreed it was a nightmare. He ended up putting in a BIB and hanging it over night. I've since run it and done the spirit run I've yet to blend it but so far have to admit I'm disappointed as far as the banana side of things go for all the extra work the banana influence seems negligible. However as a spirit in its own right its going to be a reasonable rum not sure if the banana hints are going to be there though. I'll report further once I've blended it and then after I age it a bit. Another short fall I believe is I should have recycled the offal and gone for a couple of generations, I leaning toward this entrenching the banana influence a little further. However its pure speculation on my part at this point. I did do Beaver's Spiced rum and OMG after wooding it came out ON POINT. ^:)^

I did an Agave wash hoping for tequila but alas nothing like tequila, but it is a mighty fine agave spirit in it own right, that is bright side of the story. However agave syrup is not cheap, but the reward has been a unique quality spirit that I have enjoyed immensely, however it is nothing like tequila taste.

Well I did my spirit on the banana rum, not sure if I was tripping on the fumes but for mine, the hints of banana started from the get go and right through the heads fading out through the hearts and then a non descript faint fruity? hints into the tails down to 60% by 50% it was done and into wet dog through to the faints. The white dog is excellent rum but lacking the banana hints I was hoping for, even though I included almost all the heads (that is where the banana was) its on some French oak medium toast @ 65% which worked well for my agave spirit, so lets see where we come down in a couple of weeks. Maybe sitting and wooding will yield some surprises it sure did for the spiced rum I ran recently.

just watcher Beaver's episode on his cuts and tasting and bugger me if my results were not pretty much the same as what he got, I now feel quite validated. The trouble with being new is never know for sure whether your on track or not, but places like this site sure help a bunch. As a wise man once said, "It is good to lean from experience, it is even better to learn from someone else's". :handgestures-thumbupleft:

You are correct there Jedstar, sometimes it feels a bit like having to learn to drive a car from a book.

With the help of these guys it gets closer to learning to drive by video conferencing, well I have got a tree stuck in my bonnet what did I do wrong :laughing-rolling:

watched the video, super interesting, further snooping on the net makes me seem to think a straight up banana moonshine may be the way and then perhaps blend with a rum according to taste.
