Agave mezcal

Howdy,

Has anyone had a crack at a good mezcal...found a source for agave so happy to go through the days of slow smoking and gentle heating to get the juice off...I sure aint paying for it...wow they charge for agave syrup....

was going to basically treat it like a fruit wash rather than adding neutrals to syrup.

Love to here anyone's experiences with this one.

equipment: (The Pelican) a 2 inch pot / stripper on 25L electric boiler interchangable with T500 reflux still...... 2 1/2 inch pot still on 50L keg (gas burner).....

I found some 100% pure Agave syrup. anyone have an opinion of what an infusion of this would be like?

Howdy,

I reckon a few things to consider...

the syrup is generally a pressing after pure heat...therefore lacks the toast process normally required to develop the flavours we need or wish to bring across.

An infusion would be basically adding a sugar to existing spirit and miss the ferment/ distill process.

The definite absolutely one upside is you won't have to stuff about all bloody Easter slowly smoking solid pieces in a weber... Geez it was a once off and I aint doing it again... taste f'ing wonderful butt.
