Probably not , copper needs to be in the vapor path and by the time it’s in the condenser it’s cooling and being cooled by the condenser.

The only real consideration is stainless steels ability to transmit energy/heat or in fact the reverse absorb heat and remove energy, It is far less effective than copper at doing this and the consequence will be more water to do the same job.

Copper is convenient as it is also used because it is a very good conductor of heat
