AD searchwhy does no-one use element controls from a stove to throttle their elements?
surely they would work... 240 volt.. many settings... am i missing something?

stove top controls are generally simmerstat or thermostat controlled and will cycle on and off

The 'controls' as such, control the heating of the element in a different manner. They cycle on and off over a fairly long time period, which doesn't allow for stable heating control in a still. The electricity cycles 50 times in a second...the control style we use switches each cycle (50 times a second), whereas the heating control used in stovetops will cycle on for a number of cycles, and off for a number of cycles (which can be a lot).
