Doing a bit of experimenting with all the botanicals that I've managed to get in the short time that I've been playing with making Gin.
So I thought what if I put a bit of everything that I have into a recipe and just give it a try.
I do all my macerations starting with 2 litre of high ABV neutral spirit, so please adjust qty of botanicals accordingly if you want to try this:
All ingredients only lightly crushed in a mortar.
Juniper 30 gms
Coriander 10 gms
Anjelica Root 0.5 gms
Star of Anise (2 stars) 3 gms
Rosemary (3 sprigs) 0.4 grams
Cassia Sticks (1/2 stick) 2 gms
Cardamon (1/2 stick) 2 gms
Rose buds (dried) 2 gms
I let it sit for 24 hours, then tossed everything into the air still, and added another 2 litres of water to top upto 4 litres.
Takes about 1 hour to come to temp before first drips.
Toss out the first 50 ml then I run until about 1.7 to 1.8 litres collected and that's when the taste test for flavours start getting 'off'.
I then dilute down to 45 % abv to stop from going cloudy, and store in a large demijohn.
After letting it settle for a few days - gave it a first taste test, and thought its not too bad - but certainly lacking, I think a bit of citrus.
Let it settle for a another week and we tasted again last night and added small freshly sliced Lime wedges.
Bloody Brilliant. I'll definitely be tasting more of this tonight.
I'm very keen to see if someone else has the ingredients and would do a test run - so that I can get a second opinion about this recipe.
