Stripping run and taste

Postby rug » Tue May 20, 2025 9:05 pm

Hi

I tried to do a search, but found no treads for this theme....stripping run and loosing taste.

I first made a 100% corn, bourbon style... 3 strippingruns and then one spirit run. I got quite happy with the result, but did not get as much sweet corn taste as I hoped for.

Then a 100% grain, whisky style....25% peated malt.... 3 stripping runs and then one spirit runs. I got dissapointed. I smell/ taste the smoke, probably because I know it is there. But my wife has better nose and pallet. She can neither smell nor taste the smoke.

So now I wonder. Is it better to do three spirit runs, small cuts and then blend if I aim for taste?

Hey mate, i am reading that you do 3 stripping runs then a spirit run on the low wines? Look into a 1.5 run for more flavour. You will essentially do 2 stripping runs then your spirit run will be the low wines from the 2 strips plus the last of the wash.

How i do it in a 50L boiler - make 100L wash. 1st strip is 40L, 2nd strip is 40L. Then spirit run with remaining 20L of wash plus the 20L of low wines > run slowly and make cuts.

Hello Rug
Flavour is very subjective and you may be getting a little mislead by some of the more experienced guys when they talk of flavour off the still. These guys have been in the hobby for years and they know what flavours will develop much stronger over time, even though they are only just there now.
You need to remember that whiskey takes 10 plus years to mature and flavour, much of which is created through the interaction with the barrel. I know when I did a nutrigrain wash I was disappointed with the results. Wait 2 years and it tastes really good, and has lol the traditional flavours of whiskey, no smoke however.
hang in there mate the flavours will develop much stronger:)
