After 2 hours of trial and error I think I finally got it to hold.

After putting the seal back on the inside and doing it up after a clean out and making sure no burrs or dirt was in the way...It was STILL leaking...

So I wound out the hole a bit to make sure it was sitting flush and decided to grab the LED torch and look inside whilst I was tightening the nut. Turns out I was tightening it TOO much and deforming the seal so much it was getting pulled into the hole too much and letting water through.

Loosened the nut a half a turn and saw it pop back on the inside...filled it up and appears to be no leaks...Took note of the level and will go back in the morning to double check.

Thanks again Mac!
