You're overcomplicating it mate. Pot stills should be run by feel, sight, smell and taste. Don't panic about timing your jars etc.

Just run a toothpick/twisted stream, collect in 300ml jars and run your nose over them the next day :handgestures-thumbupleft:

Above comment rings so true. Ive only done two runs on my pot still and I don't know if i have a better feel for it as i have been brewing beer for some time now but im continually tasting/smelling/feeling through run that it really doesnt seem so hard
