Adding citrus flavour to gin

Adding citrus flavour to gin

Postby BigRig » Wed Nov 03, 2021 6:02 pm

Having done 2 gins previously with lemon myrtle instead of citrus peel, my 3rd attempt i decided to cut the quantity as i thought it was too citrusy.

Now it has sat for 5 weeks boy was i wrong. There is now no hint of citrus. Eveybody that has tried it have said "its nice but needs citrus" :angry-banghead:

Without having to re-macerate botanicals and start again is there any way to add citrusy taste back in ?

I have citric acid would that work or would i be better off doing a quick maceration of citrus peel or lemon myrtle ?

Dont really want to have to re-run it and wait 5 weeks again if i can avoid it.

You could make a citrus tincture using zest only (no pith otherwise it'll be bitter) and neutral then add a bit of that to your gin. You need to go easy though as you don't want the citrus overpowering everything else.
