Calamansi or kumquats - how to add

Hello everyone,

just wondering the best way to add calamansi into a gin.

I'll start with an Odins Easy with 2/3 of the Juniper load.

I'm leaning towards pricking the whole fruit then macerate for 48 hrs as per Odins (the whole lot in the pot).

Any feedback on this method?

Kumquat juice is very sour The sweetness is in the skin personally would use the rind same ratio as any other citrus..
