I filled the barrel up was wondering was I supposed to leave headroom, or is that only for wine port? I get 11.5l into it..full to the top.

No headroom, as you will start losing volume and abv quite fast.

I leave a tiny bit of headroom in mine because I found if I didn't, putting in the bung would create new leaks in the barrel

Interesting thanks. People with 10l barrel how long do you leave it in and what do you reakon your losses volume/abv are?
I plan to use mine for my best, tightest cuts and never empty it but pull two litres out and put 2l white dog back. Initially thinking about leaving about 3months

The first two fills will be very quick so I'd suggest regular sampling lol
After the first two you can age for longer. I fill to the top and have barely noticed the angels share but if it's half full the angels take a noticeable amount.
Enjoy

:text-+1: I had port in one of mine for a while before spirit and worked nicely but you can get the same affect with soaking oak off cuts in Port and you don't need much port that way

That's :text-+1: on port not bundy lol
